The Quick Sip
- Origin: High-altitude regions in Latin America.
- Vibe: Pure, clean, and health-centric.
- Best For: Those with acid reflux, sensitive stomachs, or anyone who prioritizes 100% organic, mold-free beans.
- Price Range: $$ (Competitive for organic specialty coffee).
The Story Behind the Beans
Fabula was born out of a simple problem: many people love the taste of coffee but hate how it makes them feel. By focusing on single-origin, organic, and non-GMO beans, they ensure that the “trash” (pesticides, mold, and high acidity) is left out of your mug.
They specialize in high-altitude beans, which naturally grow slower and develop more complex flavors without the chemical help.

The Roast Profile: Medium Roast
- Roast Level: Balanced Medium.
- Tasting Notes: Nuts, Caramel, and Subtle Milk Chocolate.
- The Process: 100% Wet-washed to ensure the cleanest possible flavor profile.
The USbrew Taste Test
- Aroma: Very gentle and sweet. You don’t get that “burnt” smell often found in commercial organic coffees; instead, it smells like toasted hazelnuts.
- Mouthfeel: Smooth and “low-impact.” It lacks the sharp “bite” or “zing” of high-acid coffees, making it incredibly easy to drink black.
- The Aftertaste: Remarkably clean. There is no lingering bitterness or that “heavy” feeling on the tongue.
How We Brewed It
We recommend the Drip or Chemex method for Fabula. Because the beans are low-acid, a paper filter helps accentuate the natural sweetness of the caramel notes. We used a standard 1:16 ratio, and the result was a cup that felt “light” yet satisfyingly flavorful.

The Verdict
If you’ve stopped drinking coffee because of heartburn or stomach issues, Fabula is a game-changer. It’s not just “healthy coffee”—it’s actually good coffee that happens to be healthy.
It fills a much-needed gap in the specialty market for clean, ethical, and stomach-friendly brewing. This coffee is in our top 3 at the moment! It’s delicious!
